In the laboratory located in the artisan area of Valeggio, Ms. Enza is the bearer of our artisan pasta factory. With the know-how of a true Pastaia Master fruit of her decades of experience she guides the production staff from the choice of materials to the dosage of ingredients.It is a real pleasure to see her knotting the puff pastry squares with the tasty filling while with a severe but in the end good-natured gaze she checks all the production phases. Our tortellino stands out for its particularly thin sheet and for the delicacy of the dough whose ingredients and their dosage strictly refer to tradition.
